RIP Mix New American Diner

This weekend, I was trying to recommend a dinner place between the Twin Cities and Mankato and discovered that Chaska's Mix New American Diner, which opened this past May, had already closed.
Perhaps Mix's burgers, meatloaf, and banana cream pie weren't going to change anybody's life, but it certainly had more potential than the Ember's it replaced. Mix's closure is a shame, especially because, as far as I'm aware, there aren't a lot of great dining options in the southwest metro. I was hard pressed to name anything in the area beyond the Lion's Tap (great ambiance, low prices, mediocre burgers) or the Mystic Lake Casino buffet (can't say I've ever eaten there; don't really want to)...anyone know of a better option?
