The Town Talk Diner has always been at the forefront of this movement, so it seemed fitting to give a shout-out to this drink celebrating Pollock's experimentalist art. The bartenders at  Town Talk clearly love their craft, and are so hospitable with their guests, offering samples of new creations, and inhales of delicate flower-scented liqueurs. Our bartender seemed truly delighted to show us how he makes this drink: starting with basil oil at the bottom--Bombay gin, sparkling wine, and house-made grapefruit/lime sour are then drizzled in to achieve a Monet-ish result as the basil oil dots the drink like the first grass of springtime. The citrus flavors smooth out the pine of the gin, and together achieve unity. And if this drink does not grab you, the bartenders of The Town Talk will be happy to commission your cocktail out of the limitless colors of their palate.
