Coming Soon: Saint Paul Classic Cookie Company

After some bumps and starts, Saint Paul Classic Cookie Company is slated to open this week or early next. The bakery used to be in the Alliance Bank Center's food court in downtown St. Paul but departed last summer in search of a roomier, more affordable space. Bakery owner Katie Novotny found such a space on Territorial Dr. near University and Raymond in St. Paul. The bakery will feature "cookies, muffins, cupcakes, cakes, brownies, [and] bars," along with seasonally-appropriate specialties such as stollen and fruitcake. In a few weeks, Novotny says the bakery will start serving scones, pies, and rolls as well. Stay tuned for word of a firm opening date.
