Rob Barrett Bakes: No Need For Knead, Apple Cider Flat Bread

Remember Wonder Bread, that white tasteless loaf of sugar and gluten? There was a time when we probably thought it was good. Luckily, time has moved on.
Baking no knead bread is an easy way to get fresh, healthy bread in to your system and takes very little time and effort.

While there are lots and lots of no knead bread recipes, most are pretty standard and boring - Cracked Wheat, duh. So I made one up for Apple Cider Flat bread. This is really tasty and mixes some spicy with just a hint of sweet. Try it and send us a picture (pr@cookingfordads.net)

Apple Cider Flat Bread

Take 1 1/2 cup apple cider, warm in microwave until just luke warm (about 100 degrees)
add 1 spoonful yeast, stir

In large bowl combine:
3 c flour
1 spoonful sugar
1/2 spfl salt
Stir.

Add 1" melted butter to apple juice and yeast, stir

Add cider mixture to flour mixture and stir for 1 minute until completely combined.

Cover and let rise for 3 to 8 hours. (as long as you're at work)

Cover 2 cookie sheets with parchment paper. Grab a handful of dough and form into a crude round flat loaf about 1/2" high. Repeat until dough is gone.

Drizzle loaves with olive oil, sprinkle with garlic salt, sesame seeds, parmesan cheese and let rise for 30 more minutes.

bake at 450 for 10 minutes or until just brown, cut in 3rds and serve.
