Carrot cake--or any kind of cake for that matter--isn't an everyday occurrence, except for maybe some lucky 1950s kiddos whose Betty Crocker mother might have served them a slice with a cold glass of milk after school. No, usually the stuff is restricted to birthdays or anniversaries or fancy dinners while soft drinks and candy bars monopolize our "everyday" sugar intake. Fortunately, downtown Minneapolis office workers have an alternative to the daily trip to their co-worker's candy bowl in Cocoa & Fig's new retail outlet in the skyway level of Gaviidae. The carrot cake cookie takes one of our favorite cakes and puts it in more casual form--two soft "cookies" that sandwich a thick swipe of cream cheese frosting--that you can even eat while you're walking. You'll never go back to those cellophane-wrapped Little Debbie oatmeal pies.
