Midori's Udon Noodle Soup: 100 Favorite Dishes

No. 43: Midori's Udon Noodle Soup

It's only April, people, and we're not out of the woods on cold weather yet. And when early spring is doing its gray/dreary thing, we like to stop in at Midori's for a bowl of udon noodle soup. The broth's clarity is deceptive, as it looks about the color of church basement coffee, but packs a far richer and more nuanced flavor than its color belies. Our server told us the chewy, springy noodles are made fresh and imported from Chicago--if you're feeling famished, the udon have more heft than the skinny soba noodles. The soups can be garnished with all manner of vegetables and proteins, but we're partial to the spongy, savory, fried tofu triangles that float on the surface like lily pads.
