Wasabi salmon and bacon wrapped trout: recipe 2 for 1!

There really is nothing nicer right now than grilling: lighting the coals, cracking open a beer, and hanging out on the patio. But sometimes the recipe repetoire can get a little boring, so we are here to help. Let DIY-on-the-Fly show you how to create two simple fish preparations that are not too complicated. You can also try your own variations of ingredients--especially fresh herbs you have on hand. Once you have the basics for these recipes, it is easy to get creative.
Here are two easy and impressive recipes:
Trout wrapped in bacon
Salt and pepper
Fresh herbs: thyme and rosemary are recommended
3 strips of bacon
Season cleaned trout inside and out with salt and pepper. Season inside of trout with fresh herbs. Wrap the outside of the trout with 3 strips of bacon and hold bacon in place with a toothpick. Fry the trout, 5 minutes on each side on high heat. We used a cast iron skillet directly on the hot coals. When you're finished frying, put the trout on the plank next and smoke alongside the salmon. Garnish with fresh lemon slices. Prepare this dish while the salmon marinades and the plank soaks (see below).

Maple wasabi salmon
1 pound salmon fillets
1/4 cup maple syrup
2 Tbsp soy sauce
2 tsp wasabi (or more to taste)
1 tsp grated ginger
1 clove garlic (minced)
1 cedar plank
Mix syrup, soy, wasabi, ginger, and garlic, then marinade salmon fillets while soaking cedar plank in water (both steps need at least one hour). Place salmon on the plank, top with lemon slices, and place in grill. Cook the salmon to desired doneness--about 8-10 minutes depending on thickness.
