D'Amico and Partners plans to open its latest restaurant, Parma 8200, in the Normandale Lake Office Park (the 8200 building, across the street from Kincaids) in Bloomington on June 28th. We caught up with Richard D'Amico to learn more about what's in store at the classic Italian taverna.

Even though the D'Amico empire is mostly concentrated in the urban core (a few D'Amico and Sons are in the suburbs, but there's just one full-service restaurant, Campiello, in Eden Prairie), the partners had their eyes on a west Bloomington location for awhile. "Look at Kincaid's," D'Amico says. "They've been there for 20 years and they're going as strong as ever." The partners worked with the developer to secure a spot in the 8200 Tower, which is proximate to several office parks, desirable residential areas, and hotels catering to business travelers. "It's like a little city there," D'Amico says.

The restaurant is named after the Italian city Parma, located in the Emilia-Romagna region that's famous for its artisan foodstuffs. D'Amico says that Parma's menu will feature Italian classics--fettucini alfredo, chicken Parmesan, pasta carbonara--that are all traditional recipes. No twists, no fusion, or no fuss. Each day of the week will have its own entree special, so you could come back, say every Saturday for osso bucco or every Wednesday for porchetta with soft polenta. The not-quite-yet-finalized menu shows a selection of salumi and cheeses, tuna crudo, caprese salad, minestrone, grilled hanger steak pizzaiola, meatball sandwich, and dark chocolate panini with caramelized bananas and vanilla gelato.

Mike Dalton, formerly of Campiello, is heading the Parma kitchen (Campiello sous chef Cara Powell replaced him as chef). John Occhiato's recent departure from D'Amico Kitchen set off more musical chairs, er, toques: Justin Fredrick, formerly of MASA, replaced Occhiato at D'Amico Kitchen; Saul Chavez, who shared duties with Frederick will remain as MASA's head chef.

Parma's 3,000 square foot outdoor dining area, complete with fireplaces, pergolas, and a pool table among other amenities should prove to be pretty sweet. Sounds like it's going to be as swank as the outdoor Eden lounge that D'Amico Kitchen has at the Chambers.
