Fresh grilled tomato sauce perfect for pasta or pizza
There are a lot of good pasta sauces out there. The trouble is they are all cooked within an inch of their lives. While cooking a pasta sauce for a couple hours to thicken it gives it a nice texture, it removes most of the enzymes and other nutrients you get with a fresh tomato. So here is an easy way to make fresh tomato sauce, and you can do it in just a few minutes The only cooking that takes place is a by-product of getting the skins off. Most of the tomato remains fresh and natural.
De-juiced Roma tomatoes ready for the grill.
Here's what you need:
10-12 fat Roma tomaotes
5 - 6 basil leaves
3 - 4 cloves of garlic
salt and pepper
fresh rosemary
2 spoonfuls of olive oil
Place the peeled garlic in foil and cook on the grill for 3 minutes each side.
Cut the tomatoes in half and squeeze out the juice. Then place bottom down on the grill for 2 minutes or until the skins just start falling off. Remove skins.
Place all ingredients in a blender and mix until just combined.
Serve with pasta or on pizza.
