All the talk in the world of cocktails is about creations made with ingredients straight out of the garden, and this creation scores major points for best use of beautifully fresh local produce. Although this drink is very similar to a mojito, it also stretches the definition a bit, adding a few more flavors and complexities to the traditional recipe, and leaving out the citrus. First basil and mint are muddled with cucumber, then rum, club soda, cola, and bitters are added. Looking a bit like an aquarium with the basil and cucumbers floating around like sea monkeys, the scent is all cucumber--clean and fresh--the cola adding that caramel sweetness that always works so well with rum, and all the flavors blending into a beautiful garden melody. When you bring this cocktail together with Chef Derik's cool new bar plates--a different daily offering of a chef-created meal--for under $10-- at that point, you have pretty much won.
