Cocina del Barrio will emphasize food before drinks

The last we heard, Cocina del Barrio, the latest venture by the folks behind Barrio Tequila Bar, was aiming for a late summer opening in Edina's 50th and France neighborhood.  Demolition and building permit processes being what they are, the opening has been moved back to a tentative but hopeful early November, according to General Partner Ryan Burnet.
The Hot Dish spoke with Mr. Burnet to get some juicy tidbits to tide us over until the grand opening.

"Cocina del Barrio will draw on the same DNA as its sister restaurants," says Burnet, "but will be more restaurant focused. You can still eat at the bar, but we'll also have a separate, more polished dining room complete with marble tables." The food menu will be greatly expanded, as will the wine list. Tequila fans will still be able to choose from over 140 tequilas to enjoy with their Latin-inspired meals.

The front-of-house area will be about 4,000 square feet and seat approximately 185 guests. "A lot of this is still fluid, of course," says Burnet, "but this is what we're hoping for."

Edina does not allow happy hours, so Cocina will have to get creative in the specials it offers, like nearby Salut's Monday night deal of 10 wines for $10. "We're committed to being good citizens," Burnet says, "but we will have specials."

As Minneapolis / St. Paul Business Journal reported in March, Cocina del Barrio represents another step on the path toward Burnet's ultimate goal: expanding the brand beyond Minnesota into a national market. "We're committed to controlled growth. We really believe in the concept and the price point, but we're taking it one step at a time." They certainly have enough on their plate for now, and soon so will their customers.
