Hopkins Pizza Luce offers a lot more than cold pizza for breakfast
Suburban bike commuters and garlic enthusiasts rejoice: Pizza Luce has opened its sixth location in Hopkins on the Cedar Lake bike trail, giving both cyclists and 'za lovers reason to smile. While Pizza Luce is well known for its pizzas and sandwiches, its Hopkins location offers something new in the metro: a breakfast menu starting as early as 7 a.m. weekdays and 8 a.m. weekends. Luce's breakfasts and weekend brunches are a welcome addition to a city woefully short on breakfast options. No longer will Hopkinites have to traverse 394 in search of a decent breakfast burrito. Here's a look at the new morning menu.

We'll dispense with the most pressing question first. Yes, the new Luce has a full liquor license, and it offers a thorough build-your-own bloody Mary bar. You can choose among several vodkas and three mixes of varying spice levels, and fashion your own skewer (or two) of garnishes and nibbles.

Pizza Luce's Breakfast Burrito
Now onto the menu. One of their most popular breakfast items is the Breakfast Burrito: three eggs scrambled with spicy chorizo, jalapeño and poblano peppers, black beans, pico de gallo and Chihuahua cheese, wrapped in a flour tortilla and smothered in Quito sauce, served on a bed of jalapeño hash browns. It can be made vegan or vegetarian on request and has a nice, spicy kick to start the day with a bang.

Pizza Luce's Salmon Benedict
The best item on the breakfast menu, though, has to be the Salmon Benedict. Savory salmon cakes with poached eggs are served on a toasted English muffin with dill cream cheese and homemade hollandaise. It also comes on a bed of fluffy hash browns. The hollandaise is rich and creamy, the salmon cakes moist and supple, the eggs poached to perfection--a tasty way to get your omega 3s.

Pizza Luce's Giant Green Tofu Scramble
The health conscious can't go wrong with the vegan Giant Green Tofu Scramble. Marinated tofu sautéed with red and green peppers, broccoli, marinated tomatoes and fresh basil piled high on hash browns, served with an English muffin topped with vegan butter. It's a colorful mixture of veggies and protein that even carnivores will like.
