Peace Coffee is brewing up its first shop

Peace Coffee buys the beans and roasts them, and now they'll brew them, too, at a coffee shop opening this fall in Longfellow.
Peace Coffee already sources and roasts the beans for our morning cup, and starting this fall, it will brew them up at a new coffee shop in the Longfellow neighborhood of Minneapolis. "We've honed our craft as roasters, now we can hone our craft as baristas," says Lee Wallace, Peace Coffee director.

Besides selling Peace's fair trade, organic coffees, the shop will also offer classes on simple ways to prepare the perfect cup.

Founded in 1996, Peace Coffee works directly with farmers around the world, sourcing organic coffee beans and roasting them in its Minneapolis warehouse. The company delivers its coffees on bikes or by biodiesel van to co-ops, restaurants, cafes, and grocery stores throughout Minnesota.

Peace Coffee's new shop, near Minnehaha Avenue and 33rd Street, will have classroom space for both barista training and brewing-at-home classes. One of the shop's goals is to show coffee drinkers how simple it can be to brew a great cup of coffee without a lot of bells and whistles, Wallace says. The shop will sell home-brewing supplies in addition to coffee beans by the pound.

Other than coffee--and lots of it--the menu for the shop is still being developed, Wallace says. "It's very much a coffee shop," says Wallace, noting that the menu will be simple.

While plans for the interior are still in the works, Wallace says the company will stay true to its commitment of sustainability, reusing and repurposing items when possible. It will also bring in local artists to give the place a unique, independent vibe. And, of course, it will have plenty of bike racks.
