Simple, Good, and Tasty roasts a pig Sunday--you're invited

Pig roasts are not so simple, but they're good and tasty!
​Knowing what I know about pig roasts from attending a few of my family's, they're a lot of work.

First, you need to get a pig. Sometimes you have to kill it and gut it yourself. Other times you thaw the thing out on your kitchen counter and scare the hell out of your kids. Next, you have to have a roasting setup, and if you don't have a cousin who's built one out of a few old motors and aluminum siding, well, then I don't know what to tell you. Finally, you have to know how to cook it so the skin comes out crackling and the meat is so juicy that the result seems worth all the effort.

To wit, my advice would be: If you hear that somebody else is hosting a pig roast, and you can snag yourself a labor-free invite, I suggest you take advantage. LIke this one coming up Sunday, for example:

Lee Zukor, of Simple, Good, and Tasty, will be putting on the hog this weekend and has been imploring blog readers: Please Come to Our Super Awesome Local Food Pig Roast and Potluck on August 15. The pig is from Hidden Stream Farm in Elgin (via Clancey's), and it will be served about 5 p.m. at the Minnehaha Falls pavilion (the event runs from 4 to 7 p.m.). Zukor asks that you sign up online ($15 for adults; 11 and under free) so they can get a headcount, and that you bring a potluck dish to share.
