@shackattacks and @chefshack1: Your tweets rule!
When a chef's hands are on his or her keyboard, it takes them away from the place we like to see them best: the knife. But we've made a few exceptions for five kickass culinary tweeters.

5. @chefshack1 and @shackattacks
These are the twitter handles of Carrie Summer and Lisa Carlson, the gals behind our favorite street eats, Chef Shack. We like the way Summer and Carlson keep in constant contact with their hungry followers during Shack season, so we know where they'll be and what they're serving (complete with tweetphotos of the chalkboard menu), but also that they tweet on the off months, sending pithy travel missives from, say, Thailand's fabulous markets and beaches.

Just finishing up 4 tubs of "Rock this Road " ice cream..! Organic cream and eggs from Hope farm, burnt caramel and ganache layer& bits..

4. @ScottPampuch
Corner Table chef-owner Scott Pampuch tweets serious about his perspective on the American food system and twitters silly about his trip to the State Fair, which is why we dig his commentary.

Chicken fried bacon. Sounds good on paper. Sometimes you can't improve a perfect food. No to the "sweet sauce".

One word! Zeppoles! Find it and eat it.

I thought I just saw Justin @Bieber and my 7 year old just said " No, that is not him. He is smaller than that".

3. @HeidisMpls
Leave it to Stewart Woodman, a.k.a. Shefzilla, to, ahem, stir the curd in the twitterverse-- Fight after school, no face punches! zilla RT @ForkKnifeSpoon: yes Dara, we all wait to hear how YOU feel about food. Whateverrrr.

When Woodman and his wife, Heidi, aren't using Twitter to keep Heidi's fans up to date on reopening news--Looking at trash management for the new resto, anyone have a favorite? Zilla; Submitted our liquor license application for 2.0 today!!! Heidi--they're penning totally random, hilarious gems.

Got the new samsung vibrant--kiss my ass evil Lord Vader(iphone). The return of the Jedi has begun! zilla about 23 hours ago via web

I think Menard's has the worst website---of all time. zilla

2. @Youngchef2
Want food porn? Youngchef2, a.k.a. La Belle Vie chef de cuisine Mike DeCamp, is all about spreading his photo snaps of, say, Black and white 12-hour veal shoulder with rice, truffle, sweet corn and turnips. His notes from a recent trip to the Bay Area were especially fun:

Ubuntu needs to open in Minneapolis. Because I think I would keep them in business myself. http://yfrog.com/3dmoiroj

Getting ready for sushi and ramen at Morimoto...

Animal style...

1. @RogueChocolate
Okay, Colin Gasko is a chocolate-maker not a chef, but we're making an exception for his saliva-signaling descriptions of his amazing Rogue Chocolate bars: Wow. This chocolate is fantastic. It's got everything: the dark notes, the bright notes, floral, woody, elegant melt, multiple flavor peaks. (Ed. note: Not sure what "multiple flavor peaks" are, but we'd love to climb 'em.)

Even more enthralling, perhaps, is Gaskos's chocolate-making techno-speak that will make zero sense to the 99.999999 percent of the population that has never done fractional distillations with a rovotap.

Thinking about controlled steam condensation and log reductions...

@Gachatz Wow, do you do fractional distillations with that rotovap? That's a pricy toy!

@candyblog My guess, it relates to differing formulations and thickness, also enrobage tends to be slightly under-tempered for viscosity
