Pink Lady-- vintage cocktail recipe

Much more than a girly drink.
While the name Pink Lady implies a drink that is delicate and sweet, this lady kicks ass. With a shell-pink hue and rich scents of apple and pomegranate, this vintage cocktail is potent but deceptively balanced. We recommend using only fresh lemon juice and homemade grenadine for best results. Applejack, an old-school apple brandy, is used in the classic Pink Lady recipe and costs about $14 at Surdyk's. If you have trouble finding Applejack, we substituted apple Calvados, and the result was blissful.

The rule for shaking cocktails with egg whites: Just when you think you can't shake any longer, shake for one more minute. The velvety froth is worth the effort.

Here's the recipe:

Pink Lady

1 1/2 oz. gin
1/2 oz. Applejack
1/2 oz. grenadine (for homemade reduce equal parts pomegranate juice and sugar)
1/2 oz. fresh squeezed lemon juice
white of one egg

Shake all ingredients in a cocktail shaker without ice for about 30 seconds, until a froth forms. Add ice to your shaker and shake for another 1-2 minutes--or longer if you have the patience. Strain into small cocktail glasses. Makes 2 small cocktails.
