Pink Lady-- vintage cocktail recipe
The rule for shaking cocktails with egg whites: Just when you think you can't shake any longer, shake for one more minute. The velvety froth is worth the effort.
Here's the recipe:
Pink Lady
1 1/2 oz. gin
1/2 oz. Applejack
1/2 oz. grenadine (for homemade reduce equal parts pomegranate juice and sugar)
1/2 oz. fresh squeezed lemon juice
white of one egg
Shake all ingredients in a cocktail shaker without ice for about 30 seconds, until a froth forms. Add ice to your shaker and shake for another 1-2 minutes--or longer if you have the patience. Strain into small cocktail glasses. Makes 2 small cocktails.
