The Strip Club crew takes over Subo.
Coinciding with Subo's recent closure comes the announcement that its space will become a new restaurant called The Inn, run by Tim Niver and Aaron Johnson, owners of The Strip Club in St. Paul and founders of the revived Town Talk Diner. The pair are partnering with Subo's owner, Jim Hays, and fllipping the space in the hopes of reopening in mid-November, according to the Star Tribune.

JD Fratzke will stay at the Strip Club, where he's chef and co-owner, but is serving as a consultant on The Inn's gourmet comfort food menu, plus classic cocktails and craft beer. Niver also says that elements of Subo's South Pacific-stage set-meets--the-city decor will remain and he will rehire some of the former staff.

It's a busy time for Aaron Johnson, who's also launching Prairie Ale House in Eden Prairie this month.
