By spring, Barbette will be one of six Minneapolis eateries run by the Bartmanns
Minneapolis restaurant owner and manager Kim Bartmann has a half-dozen restaurants on her proverbial plate (we forgot to mention Gigi's in part 1 of our interview yesterday). Today she dishes about her own tastes--where in the Twin Cities she likes to eat, what her favorite holiday food is, and what she's likely to order at one of her own restaurants.

What are your favorite Twin Cities restaurants?
My favorite places are Spoonriver, Birchwood, Lucia's, Corner Table, 112 Eatery, Jasmine Deli, Rainbow Chinese, Evergreen, Tanpopo, Broders, and my own.

What is your favorite holiday dish to eat?
Pumpkin pie. And it shouldn't be relegated to just holidays. It's a good regular breakfast food, if it's not too full of sugar.

What is your favorite knife or kitchen tool?
I love my ceramic knife that my stepdad gave me.

What is your favorite dish on the menu?
I don't have favorites, but right now that bison stroganoff at the Red Stag is awfully good. I eat the pad Thai and the #2 Scramble at Bryant-Lake Bowl a lot.

If you could put any dish on your menu, what would it be?
My chefs can put any dish on our menus, and we do it all the time with the changing seasons. Achieving a great fish fry and skinny homemade hash browns stand out as a recent menu victory.

What has been your proudest moment as a restaurant owner?
I am most proud of our ongoing efforts to use local products.

What would you do for a living if you could not run restaurants?
I worry about what I would do for a living, and I honestly don't know. I don't know what skill set I have that is applicable to other jobs. Maybe managing very creative people, or managing a creative construction project, both of which I do a lot. Maybe somebody will read this and offer me a real job. Then I can start a retirement fund.
