Anodyne's Artichoke Melt: 100 Favorite Dishes, No. 76

​Some dishes thrive on flashy presentation, trendy techniques and lofty aspirations. Not so the artichoke melt at Anodyne, which relies on a great cast of ingredients that come together to calm, entertain and feed a busy gal. The bread is grilled to perfection and its contents get gently heated, melded and prepped to descend into my waiting belly.

What makes this veggie riff on this classic sandwich so pleasurable -- aside from the obvious beauty of melted cheese in any milieu?

This melt delivers with a starring role for the much-loved artichoke and a cast of tasty supporting players. The multi-grain bread is seed-covered and thickly cut. The fresh slice of tomato sits happily on a blanket of just oozing provolone cheese and the housemade aioli gives it all a little extra flavor. And, they don't skimp on the artichokes. Thick quarters populate this sandwich, front and center, and demand your attention.

Ahhh, the signs of the grill are unmistakable.

Then, there's the grill, which imparts all those crispy bits -- both on the bread and the artichokes. It's a basic cooking technique and yet, the perfect one to bring all of these humble players together. As you take a large bite, the textures mingle -- the fibrous bread, the juicy vegetables and the layer of soft provolone -- into something better than the sum of its parts.

Throw in the blue corn chips and pickle and the effect of the melt is complete. In this case, a simple thing done simply makes for a pleasurably comfortable eating experience, heightened by having artichokes in the lead role.
