Even those who have lived in New Orleans for decades, where fried chicken is an art form, might find themselves losing years of their lives trying to prepare the dish at home, always feeling some sort of disappointment at the results. It's not always easy to pinpoint what is wrong. Was the batter too thick? The oil not hot enough? Or do you just have the nagging feeling it could be better?

Travail's version keeps the traditional elements intact: the white meat so dewy, the dark meat luscious, the batter crisp yet airy with buttermilk, giving it that classic flavor. But Travail makes the dish all its own by offering small boneless bites artfully presented with a lovely mustard sauce, pretty as a picture. And then there are the fabulous seasonal sides--like pressed watermelon in summer.
