Over at Heartland Restaurant & Farm Direct Market, when it comes to locally sourcing meat and produce, there is no messing around. So when you see the words "Kansas City" on the menu, this might cause a bit of  head-scratching. But according to chef Lenny Russo, the Kansas City does not refer to the city but to the cut, cleaved from the loin and kept on the bone to enhance flavor while the meat is cooking.

​Heartland also requests their animals on the smaller side, so the steaks can be nice and thick, but not Flintstone-sized, giving the chefs a better ability to control doneness. The preparation of this dish, with just a rub of grapeseed or sunflower oil and seasoned with sea salt and tellicherry pepper, lets the meat speak for itself. Russo suspects we will see the Kansas City strip served with morels, ramps, and asparagus in a sauce based on glace from the beef bones and fortified with brandy or red wine this spring. In summer, he says we can look for king bolete and golden chanterelle mushrooms, baby potatoes roasted in duck fat, grilled Treviso radicchio, and heirloom tomato relish.
