Walking through the food vendors at St. Paul's Hmong Village is a feast for the senses. First, take in the sight of all the dishes: slabs of lacquered ribs, fish wrapped in banana leaves, vibrant tri-colored teas. Then there's the scent of lemon grass and ginger, and the sound of conversation in foreign languages all around you.

Offered by several vendors--we usually scope out the ones that look freshest--these little gems prove a bit mysterious: How exactly does so much stuffing get inside the wing?

But your questions will fade as soon as you bite through the skin, which is roasted to a lovely, crisp brown. The skin snaps aside to reveal boneless chicken and a layer of perfectly seasoned pork and silver thread noodles. Dip the divine mix into hot sauce made with ginger, garlic, chilies, lime, and lemongrass and you have a dream team of savory flavors.
