La Loma's puerco tamale: 100 Favorite Dishes, No. 10

The lure of the puerco
Some dishes are precious, requiring a dedicated diner to make deep forays into their wallet, the world of impossible-to-get reservations, and hoity-toity food circles. La Loma's puerco tamale is just the opposite, which is part of the reason we consider it like an old friend--always available when you need a little gastronomical comfort, joy, and cheering up.

It's glowing orange hue, spicy red sauce, and umami-rich pork filling warm your heart and stomach at first bite.

A soaked corn husk hides the magic.

This is comfort food to be celebrated, whether you pick up one of these steamed delectables in St. Paul, downtown Minneapolis, the Midtown Market or at the Cafeteria on Lake Street. And while these puppies are easy to obtain, the process of making the humble tamale is no joke. While La Loma's owners, the Garcias, and their staff spend hours cooking pork, soaking corn husks, mixing masa, and wrapping it all up into those neat little packages, the rest of us only have to pony up a few bucks to partake in this Latin wonder.

Unwrap la loma and get to el puerco!

The cornmeal enrobes the red sauced pork and promotes a priceless sense of well-being. Don't get us wrong--we like the elote (corn) and chicken varieties, but the puerco (which means pork) is that most assuring mix of heat, meat, and sweet. It's the hand-held crux of what all comfort-loving carnivores seek, and requires only that you get yourself to the nearest La Loma venue and pony up slightly more than two bucks. In a world full of upcharging and stress, this puerco tamale is a moist, spicy example of good, cheap fun.
