River Chocolate Company's Mango Tango: 100 Favorite Dishes, No. 11

This ain't just mango and white chocolate...
​It used to have a name that fit into the DSM, because there are so many flavors cohabitating in this seemingly simple candy from River Chocolate Company. However, proprietors Allen Whitney and Deirdre Davis didn't want to offend, so they rechristened the treat as the Mango Tango and not to worry -- it still tastes as sweet -- and spicy, sour and salty. In other words, it's a melange of ingredients worthy of a discerning palate.

Can you imagine what goes into a white choco beauty like this?

Whitney makes the white freeform candies in the company's kitchen in River Falls, Wisconsin. Applying dried mango to a disk of Malaysian white chocolate and then sprinkling on several diverse natural items, he imparts them with stimulation for all parts of the tongue. There's lime zest, dried lemon peel, sea salt and Turkish Aleppo pepper which are added to the confection while the white chocolate is still setting.

Word is that Davis came up with the idea for these pale, dappled beauties. The result is a revelation -- sweet fruit, creamy chocolate, sour citrus, salt and the tart heat of the spice named for the Syrian city on the Silk Road, which make for a mouthful as broad as a savory curry. It's a layered and complex candy experience, and yet you can get it with a simple visit to Linden Hills (or one of several local farmers markets). We're glad that River Chocolate Company decided to focus their considerable talents on chocolate -- and that they worked together to create the unique and amazing Mango Tango.
