R.A. Mac Sammy's, new food truck specializes in mac and cheese

We first spotted it at the St. Paul winter carnival: a sun-colored new food truck specializing in custom-made mac and cheese. Now that the weather has turned warmer, the R.A. Mac Sammy truck is out on a more regular basis. We decided to stop by and give the comfort food a try. We also chatted with the mac and cheese mastermind, Kevin Huyck, about where he's been and where he hopes to go.

They've been taking the truck through St. Paul for their first few runs. On the day we visited, they were parked in a sunny spot next to Mears Park. "We're licensed to go anywhere except Minneapolis proper," Huyck said. A resident of Apple Valley, he said he hoped they might be able to have some spots closer to home. Are we ready for a suburban food truck? The only thing holding him back is finding a spot where people will gather.  


South metro workers, let your voices be heard! Enough of this city-dweller snobbery on the food truck front. Let's buck the notion that the mobile feast is a trend.

The mac and cheese we ordered comes basic or with embellishments of the diner's choosing.  We added some peppers, breadcrumbs, and the irresistible bacon to our order.

​First off, the serving portion is massive, a hefty cheese-and-pasta-laden container. The orders are $8 per portion; extras are 50 cents each. The cheese sauce coats each little elbow, cooked perfectly al dente. For those who grew up with the blue-and-white box in the pantry, the orange noodles will be instantly familiar. The sauce is creamy but not gooey, with a very mild cheddar flavor. The bacon was smoky, with just a hint of sweetness, and the peppers were mild. The buttery, crisp crunch of the breadcrumbs added a hearty dose of welcome texture.

My son became violently ill 45 min after eating a hotdog from this food truck. We had to leave the Lebonon Hills New Years Eve party early. The funny thing is that my 10 year old said,"I did see him manhandling my hotdog..." Also the 4 cheese mac had swiss in it so the kids didn't like the taste so my wife and I ate it, thank God it wasn't manhandled...

Anybody else go over to the web site and read the dudes blog?  If you have no plan to figure out where to park your truck and when you do decide on a spot but can't be bothered to show up on time and you have no idea how to run your generator... I have to ask?  is it a real business? how can we have any faith whatsoever that the dude understands all those complicated Health Regulations?   I say:  don't patronize a half ass attempt like this...
