Bon Appetit recently published a list of the 10 Best Baguettes in America
to coincide with its "Insider's Guide to Paris" issue. Two Midwest bakeries made the cut: One was Floriole Cafe and Bakery in Chicago, the other was the Minneapolis's Rustica

Though the ingredients in a baguette are simple and few, nailing down the right technique to achieve a perfect crust and chewy interior takes years of practice. Rustica's team, led by head baker Tammy Hoyt, uses their well-honed skills to create breads in the European tradition.
