Lake Nokomis calls for food vendors

What foods would you like to enjoy lakeside in 2013?
A request for proposals has been issued by Minneapolis Parks and Recreation, calling for concessions vendors to make their bid to be the next food stands serving customers next summer. 

On April 30, the board put out a call for proposals (which are due May 31) asking that, based on comments from resident's surveys, any potential concessions vendors fit the following criteria from the Citizen Advisory Committee, who says that the ideal candidates would "make people talk about [the chosen concession stand] in combination with the latest and greatest destinations throughout the city."

Two quotes from the survey capture the neighborhood expectations:

"Nokomis tends to be overlooked for thoughtful, neighborhood conscious development, even though it attracts a much more diverse user-base than the other lakes. Food is such a natural people-pleaser, and it would be wonderful to celebrate that diversity through affordable, interesting food selections."

"Don't make it expensive -- make it accessible for most everyone's economic situation. It is a very welcoming and family friendly neighborhood -- this location should reflect that."

It seems that the Nokomis neighborhood would like to have its own version of Sea Salt, Tin Fish, or Bread and Pickle, but what would you like to see set up shop in this lake-adjacent neighborhood in 2013? Ditto on the healthy, sustainably produced (and affordable) fare. Rather than fish and seafood, which would be redundant given Sea Salt, how about sandwiches/wraps/tacos featuring pork, chicken, beef and veggies from Minnesota farmers (like Pastures a Plenty)? And local beer is a MUST!

I think Lake Calhoun and Minnehaha Falls - with Sea Salt and Tin Fish - have done in excellent job!! I would love to see something local & affordable. Would be great to see some local beers featured too! - and with all these food trucks popping up - why not invite one of them to open up shop?
