Summer cocktail recipe: Ginger beet gin & tonic
We'll spare you the "beet the heat" and "you can't beet this" references while sharing this recipe, but this ginger beet gin and tonic, made with the freshest of seasonal ingredients, is earthy, fresh, and clean. A fine spin on the traditional gin & tonic, the beet-infused gin, mint, and ginger liqueur add complexity and a modern twist to a summertime classic. 
Summer sipping made farm-fresh
Beet Gin & Tonic
1/2 oz. lime juice
fresh mint
tonic water

Your beet-infused gin will be a lovely ruby hue.
In a tall mixing glass, muddle three large leaves of fresh mint with beet-infused gin. Add ginger liqueur and lime juice. Fill glass with ice and stir until cocktail is chilled. Strain into your favorite glass. Add ice, if desired, while considering that ice will melt and dilute your cocktail. Top with tonic water, garnish with a mint leaf.
Beet-infused gin
Fill a mason jar with desired amount of gin. Add two small, peeled and quartered beets per pint. Let sit overnight. Remove beets and enjoy.
