Colossal Cafe, breakfast darling and Best Neighborhood Cafe in St. Paul, announced this week that it is also adding dinner service to its St. Paul location. After securing a beer and wine list, the Tennuccis set about finding a chef who would not only believe in their scratch cooking philosophy but could also take service to the next level. From the looks of the new chef's experience, they have found a perfect fit.

Andy Lilja was most recently the sous chef at Heartland, Lenny Russo's resolutely local fine-dining restaurant in St. Paul's Lowertown.  

The initial menu includes beets three ways with mint, yogurt and pistachios; roast pork salad on house-made baguette with sauteed spinach and provolone; lamb burger with hummus, mint yogurt, and pickled cucumber; smoked spare ribs with collard greens, Axdahl farm corn on the cob, Parmesan and black pepper honey butter; house-made gnocchi; and more.

The beers on tap will be a local selection, including Summit Saga and Oktoberfest as well as Schell's Pils and Rush River Amber.

*snooze*  Did all of the chefs in this town all go to the same school?  Because it sure seems that they all cook the same (boring) things.  House-made gnocchi?  Wow, that is so daring!
