|Fish Smart promotes sustainable seafood at the Zoo|
One of the newest farmers markets to pop up in the Cities is the one found in the Apple Valley parking lot outside the Minnesota Zoo. We stopped by to have a peek and a taste of the goodies available. We found the usual, beautiful Minnesota bounty, but then we spotted something unexpected.
Chef Stewart Woodman (Heidi's and the newly opened Birdhouse) and chef Ben Mauk (Birdhouse) were on hand serving some delicious treats. Woodman works with Fish Smart
, the Minnesota Zoo's sustainable seafood initiative. Fish Smart has teamed with some of the biggest names in the food industry in town, chefs like Woodman, Tim McKee, Jamie Malone, and Jack Riebel have committed to using only sustainable seafood in their restaurants.
|Elegance in a parking lot: the shrimp and pea pate appetizer|
While visitors can shop for the best in seasonal produce at the farmers market, they can also visit the Fish Smart chefs at the stand and get a small taste of how great sustainable seafood can be.
On the day we visited the chefs were serving the pea pate that is fast becoming the can't-miss dish at Birdhouse, topped with a thinly sliced shrimp and garnished with a little chive blossom on crostini. Eating a world-class amuse bouche in a suburban parking lot isn't a bad way to spend a Wednesday afternoon.
