The Nicollet undergoes management change

The Nicollet changes hands but keeps its same corner


Since April 2011, Jeremy Konecny has served as owner and general manager of the Nicollet coffee shop on the corner of Franklin and Nicollet. But after encountering problems with loitering and drug and alcohol use at this busy intersection, Konecny decided to close up shop and sell the place to his neighbor, Michael Graca of Boiler Room Coffee, reports the Southwest Journal.

After former resident Tillie's Bean moved on from this Stevens Square location, Konecny took over and quickly went to work sourcing super premium espresso (eventually settling on beans from Mr. Espresso in Oakland, California). He also decided to expand the food options beyond the usual muffins and biscotti. Under his management, the coffee shop started making several signature varieties of crispy crust pizza (under the restaurant-within-a-restaurant banner of Eat Street Pizza), wraps made with their own blends of flavored cream cheese, and big ol' breakfast burritos. 

So what will become of the space now that they're under new management? Here are more details on the future of the Nicollet.

Graca will keep the Nicollet running as a coffee shop for now, but he plans to apply for a beer and wine license in the next few months. He hopes that serving some adult beverages at this venue will bring in the kind of business this corner saw when it was the Acadia Cafe. If the beer and wine license is approved, he plans to extend the shop's hours and consider the possibility of reshaping the Nicollet into a late-night venue.


Graca has enjoyed a fair amount of success with Boiler Room, so the surrounding community hopes he'll be able to transfer some of that to this new project. As for Konecny, it sounds like his pizza-making days aren't over yet. His final farewell on the Nicollet's Facebook page reads, "Thank you ALL for this experience and remember to 'like' Eat Street Pizza to find out where the pizza is heading!!"
