Butter moves, Solomon's expands to Uptown, and BC2 reopens: Bakery news tidbits

Butter's famous cream puffs are still available, but now at a new location

It's been a busy week or two in the world of local bakeries.

After a very successful Kickstarter campaign, Butter Bakery has secured the funds needed (roughly $15,000) to move its operation from 36th and Grand Ave. S. in Minneapolis to a new home on the ground floor of a building near Nicollet and 37th, just up the street from Blackbird Cafe.

Here are the details on when Butter will make its move, an update on BC2 finally opening, and plans for an Uptown branch of Solomon's Bakery:

Butter plans to make its move during the first week of October, reports the Star Tribune. The new space will allow for more seating, a bigger kitchen, and an ice cream maker so Butter can start serving its desserts and pastries a la mode. Though Butter offers a number of lunch-ish options like burgers, soup, green salads, and BLTs, there are rumblings from owner Daniel Swenson-Klatt about adding dinner service. Whatever happens, we're glad to know Butter will still have its amazing biscuit breakfast sandwiches.

The first week of October is also slated to bring a new bakery to the Uptown area. Though Solomon's Bakery is mostly known as a Mill City Farmers Market vendor, it also has a physical location on Central Avenue. Now owner Veronica Anczarski is expanding her business and adding a new outpost at 2827 Hennepin Ave. S. near KinhDo and Isles Bun and Coffee. Solomon's is known for creative breads, classic cookies, and sweet and savory rolls.

And finally, after multiple setbacks Bread, Coffee, and Cake will reopen in a new location in Mendota Heights. BC2's new digs are bigger and will allow for more eat-in space for diners. As before, the bakery will serve breakfast and lunch with several cakes, muffins, bars, and cookies available all day. We're mostly excited for the return of the cherry-almond bread and incredibly rich and tasty three-cheese chorizo bread.
