It's November, which means the great food fest of Thanksgiving is fast approaching. It's time to get those knives sharpened and plan those shopping lists. Here is a collection of classes for novices, experienced cooks looking for a twist on tradition, parents wanting to get the kids involved, and even a class on a vegan feast. Bring on the gratitude.

Cooks of Crocus Hill

Saturday, November 17, the Cooks have assembled an entire day of mini classes to get cooks ready for the great feast. At their Edina, St. Paul, and Stillwater locations, classes include side dishes, where students will mash pototates and roast sweet potatoes with pears; roasting the perfect turkey with scratch-made giblet gravy; and quick and easy desserts. Way Cool Cooking School
The name doesn't lie. The school is hosting an adult class about "Re-Thinking Thanksgiving" that allows participants to take liberties with tradition. Turkey roulade stuffed with cornbread and cranberries, pumpkin soup, and much more will reignite that creative fire. Classes are November 11 and 13 at the Eden Prairie and Savage locations. Way Cool is also hosting classes with the kidlets, including preschool classes to teach kids 3 to 6 how to help out with the big meal and another for ages 7 to 14 on how to get in the kitchen and cook some of the traditional dishes. John Michael Lerma
Thanksgiving Basics with John Michael Lerma, author of Garden County Cooking, who will explain the basics with his down-home style and considerable charisma (he's a frequent contributor to Twin Cities Live cooking demonstration segments). Prepare brined turkey, cranberry sauce, dirty mashed potatoes, gravy, and more. The class is Monday, November 19, at All, Inc in St. Paul for only $30. Find more information here.

Who says a Minnesotan Thanksgiving dinner must be made inside a sweltering kitchen? Why not try making the bird on the grill? How about the entire meal? On November 15, Kitchen Window will host "Party BBQ: Thanksgiving on the Grill from Daniel and Doug." Not only is the bird done on the grill, so is the gravy and the pumpkin pie. Vegan Thanksgiving
An entire holiday centered around a roasted meat can be daunting for compassionate eaters. There are options beyond the much-maligned Tofurkey.
