How now Red Cow?
Luke Shimp is no stranger to converting former video rental stores into hopping restaurant locations. While part of the Blue Plate Company with sister Stephanie Shimp and David Burley, Luke helped transform the former Hollywood Video near Franklin and Hennepin into the Lowry. Now, on his own after being bought out by his former partners, Shimp is ready to work that magic on a former Blockbuster near 50th and France.
Shimp's new project will be called Red Cow. The menu is expected to feature gourmet burgers and a well-selected wine list. Located at 3624 W. 50th St., the space has an added perk above many other nearby restaurants, an adjacent parking lot. Look for it to open in the spring.
