An unforgettable taste of the South

As a countdown to the Best of the Twin Cities 2013, coming April 17, the Hot Dish is serving up 50 of our favorite local dishes.

Beignets are a fluffy Cajun cousin to the doughnut. Puffs of squarish dough are fried until tender crisp and then buried under a pile of powdered sugar. It's not easy to find a taste of Louisiana this far north, but one chef is delivering those flavors.

Chef Tim Glover, owner of Cajun 2 Geaux, is a Louisiana native who landed in Minnesota. His big, green food truck, a revamped camper, is easy to spot when he's out and about. Even if it wasn't a screaming loud color, your nose would know the way. Wafting scents of andouille, shrimp, red beans, and rice are hard to miss.

The beignets are tossed from the fryer into a paper bag with a scoop of sugar and given a vigorous shake before being handed over. Three beignets are hot, tender, chewy, and wonderfully decadent. Each bite delivers a puff of of white - a professional would know not to wear black
