Flan is divisive thing. Some people find it texturally off-putting, whereas the pro-custard among us prefer it even to a slice of pie or piece of chocolate cake. Whatever your position on this very Old World dessert, if you're going to have flan, you want the best. Well, we here at the Hot Dish can tell you that the best flan currently being served in the Twin Cities is the crema volteada, a fabulous Peruvian-style flan, at Somos Peru in the Windom neighborhood of Minneapolis.
She doesn't make it every single day, but if you happen to be at Somos Peru when chef Isabel Custodio has arrived early and made a big batch of crema volteada with enough time to allow it to set to that perfect wobbly consistency, then please for the love of all that is sweet and caramelized, order it.
For about $3 you get a piece that easily serves two and is full of real vanilla bean-flecked flavor. The Peruvian style is to make this dessert with a thin layer of deeply golden, hardened caramel on top and a foundation of sweet shredded coconut. The textural play of creamy, chewy, and that glassy coating is a perfect strata of confection.
Unrelated but worth noting, this unassuming restaurant and sports bar is not only a destination for South American dessert but is also a great place to catch the international soccer games that other local drinking establishments don't always air.
