Occasionally, a new food truck just rolls out of the gates and nails it. Right off the bat we knew there was much to love about Cafe Racer. Making its debut on the downtown Minneapolis streets, it had the moxie to start the season in October, but it has the culinary chops to back it up, including this simple but delicious pork plate.
The food Cafe Racer is serving is inspired by what truck co-owner Luis grew up eating in his grandmother's Colombian kitchen. The roast pork is the perfect execution of what gently cooked meat can become, silky textured and simply seasoned. Wholly satisfying without any need for adornment, it's served with a side of fluffy white rice and a sweet, crunchy carrot souffle.
No matter the weather, this dish is suited to every season. The rich, roasted meat is so comforting in cold weather or a treat for those who don't want to turn on the oven in the hotter months. Spiked with pickled onions, each bite is a balance of succulent and bracing.
