EU Photography Hark! The angels herald the day of baba rhum
Rejoice for it is Thursday! On this day every week the baking angel at the Lynn on Bryant turns out the tasty, substantive pastry that is their baba rhum.
Muffin-shaped cakes are baked, sliced in half, stuffed with ultra-rich whipped cream, and soaked in a rum mixture. The top glistens like a spring morning breaking, golden as the sun. The texture is something akin to the love child of choux pastry and brioche. It's impossible to eat tidily, so feel free to succumb to the fun of smearing a little lightly sweetened whipped cream across your cheeks. The syrup that drenches the interior has just a little herby spice note with a kiss of orange.
