Each year Food & Wine Magazine
anoints a collection of chefs across the nation as the best, new up-and-comers. Historically it's been a career springboard for many leaders in the culinary world. Locally, past winners have included Stewart Woodman
of Heidi's and Erik Anderson
, late of Sea Change and now owner and chef of the critically lauded Catbird Seat in Nashville. This morning the magazine announced its 2013 Best New Chefs, and another Minneapolis chef of Sea Change was recognized, Jamie Malone.
They explained why she's amazing: "Because she's masterfully running one of the country's best sustainable seafood restaurants."
From the Tim McKee school of excellence, Malone began by first filling in when Anderson left the restaurant. As the powers that be interviewed a national roster of chefs for the job, Malone proved herself irreplaceable. We love her delicate hand with fresh flavors, and her minimalist ability to coax out the briny essence of her raw materials is swoon-inducing. Simply put, she rocks.
