As excited as we were about Borough
opening in the North Loop this year, we were even more interested about what was happening underneath it. In the growing trend of eateries including a separate but related bar in their concept (see also: Bachelor Farmer and Marvel Bar, Union and Marquee), Borough owners Tyler Shipton and Nick O'Leary made excellent use of their basement by turning it into Parlour, a chic bar that slings some of the most potent and original cocktails in the city.
Though the menu of drinks (there are some snacks and desserts served here too) includes plenty of foamy, egg white-topped tipples and drinks made with Bittercube bitters, fine aged bourbons, and its very own ginger beer, there was one particular drink we felt went down easy and lived up to its cheeky title: the Panty Dropper.

, this fragrant and refreshing beverage combines a few familiar items with a bunch not often seen in your average bar. It has bright notes of citrus thanks to lemon juice and a dose of orange bitters, clean and savory layers from the locally distilled, intensely dill-flavored Gamle Ode aquavit, and an elegant finish with Hana Hou Hou Shu, a sparkling sake that tastes like a more botanical version of champagne.
There's not one overtly dominant component, which creates a softness in this far-from-soft drink. It sneaks up on you, but you'll never be startled by it -- just pleasantly surprised.
