Union's opening chef has left the building

Some tasty restaurant news broke this afternoon. Jim Christiansen, the opening chef at Union, has packed his knives and is heading toward Uptown to open his own space. Hot Dish was able to confirm the news with the chef. Here are the details:

Dara Moskowitz Grumdahl writes that he is opening a new restaurant called Heyday that will occupy a section of real estate that includes what is now a laundromat and the former Sunnyside Up Cafe restaurant space.

Christiansen is partnering with former La Belle Vie front-of-house manager Loren Zinter. Zinter explained to Grumdahl that they have been working on these plans for three years, dreaming "of combining approachable, everyday pricing, and finely conveyed flavors."

In addition to working with Tim McKee at La Belle Vie and helming the kitchen at the ill-fated Il Gatto, Christiansen has also spent time at Solera and at world-renowned NOMA. There he learned about foraging ingredients and received hands-on training for transforming ingredients into remarkable dishes. 

When he returned, it was to the Union job, but when I spoke with him, he was clearly still brimming with ideas and inspiration. A glimpse of his inspiration can be found in the humble savory doughnut holes, a dish that has become a runaway hit at the Kaskaid Hospitality-owned Union.

No word yet on who will replace him in that kitchen.

Can't say I was all that impressed with the food at Union, so I might give it another try with a different chef. The savory donut holes were the only thing I liked !

Too bad every review of Union was "good location, cool roof, bleh food". Not interested in any new place of his.

we had exactly that experience there...and at Il Gatto...and at Solera when he was working there...so will a new location change that?
