When Hector Ruiz's Rincon 38 opened just a few months back on the corner of 38th & Grand in Kingfield - an increasingly popular intersection for gourmands and they restaurants they frequent - we expected to enjoy some small bites and some Spanish wines. What we didn't expect was to become such fervent fans of a plate of octopus.  After a savory mushroom flan with quail eggs, some sangria, piquillo peppers stuffed with tuna, a little more sangria, and some fried cheese with sweet apple-fennel slaw, we were ready to attack the slightly menacing-looking octopus, suction cups and all. The meat is braised so it's not at all rubbery. In fact the texture - meaty, firm but tender, and pleasantly chewy - is really the most unique aspect of the dish and its biggest selling point.

Paired with crisply fried patatas bravas, chunks of salty and spicy chorizo sausage, and dressed with a few different creamy and acidic sauces, the overall effect of the dish is almost like a very upscale breakfast hash. It's comfort food, Spanish-style, with the unexpected texture of octopus. Try it, we dare you not to like it.
