|A fresh Mexican concept moves into the former Birdhouse space this fall|
Third time's a charm?
That's what the owners of Amore Victoria
are hoping is the case for their new restaurant, Nico's Taco Bar, slated to move into the vacant space at 2516 Hennepin Avenue, reports the Southwest Journal.
The renovated house was most recently occupied by Stewart and Heidi Woodman's Birdhouse on Hennepin and before that, housed well-loved first date spot the Duplex.
Owner Alex Victoria plans to create a full a la carte menu of authentic Mexican fare inspired by his mother's cooking, but keep costs low to compete with the nearby outpost
of human baby-sized burrito chain Chipotle.
Named after the Victoria's son, Nico's Tacos will focus on high quality ingredients like locally-sourced proteins, organic produce, homemade salsas and sauces, and Mexican cheeses to create various ceviches, guacamoles, and tacos. They'll also be applying for a full-service liquor license and plan to serve margaritas and other cocktails along with wine and beer.
Since there is little to do to the interior space, Nico's is aiming to open relatively soon on September 3. You can follow their progress and find out (a little) more on their Facebook page
