One man has helped open dozens of successful area restaurants, including Rye Deli
. The other flourished with small plates at a wine bar after learning the art of fine dining at D'Amico restaurants. What do you get when you bring these two minds together? You get a Prairie Dogs pop-up, of course.
Craig Johnson and Tobie Nidetz will bring their pop-up to the people on
Thursday, October 3rd, as a way of introducing their forthcoming restaurant, Prairie Dogs Hot Dogs & Handcrafted Sausages. First Course Bistro
on Chicago Avenue in South Minneapolis will be transformed into this Prairie Dogs pop-up, which will feature -- you guessed it -- hot dogs and handcrafted sausages.
Johnson was inspired by the availability of quality ingredients and the food scene's newfound respect for old-fashioned butcher shop techniques. The pair jokingly call their style farm-to-dog. Although it's a celebration of meat, everything will be sourced from local purveyors -- you won't find any of those mystery meat shenanigans the store bought sausages try to pull.

All beef natural casing on a steamed poppy seed bun
The Prairie Dog
Classic Chicago Style with all the trimmings (mustard, onion, relish, tomato, pickle, celery salt) $3.25
Pliny The Elder
Duck fat fried dog, foie gras mousse, currant apple relish $7.50
Lamb sausage, piquillo peppers, feta, mint aioli, soft bun $6.00
Char grilled, soft bun, sauerkraut, onion, mustard and relish $4.50
