Kyatchi: Sustainable sushi coming to south Minneapolis

The sustainable seafood trend shows no signs of slowing down, as evidenced by the new sushi restaurant heading to south Minneapolis. Kyatchi promises to use only responsibly fished ingredients, and the team behind this venture knows a few things about seafood.

Sarah and Sam Peterson are the sibling team behind the new venture. Sam Peterson was the one-time marketing director at First Avenue. Sarah Peterson was a manager at Azia, Stella's Fish Cafe, and Bar Abilene.

The duo will bring in sushi chef Hide Tozawa to run the kitchen. His resume includes stints at Fuji Ya and Nami. Anne Saxton, marketing maven for the Kim Bartmann restaurants (Bryant Lake Bowl, Barbette, Red Stage, Pat's Tap), will also be part-owner, with Bartmann consulting on the restaurant.

They will be opening in a restaurant space that has held a few food service tenants over the years at 3758 Nicollet Avenue in south Minneapolis. The restaurant is still in the planning stages. Requests for comment weren't immediately answered. Stay tuned for more updates.
