The Wedge and Wheel: New cheese shop coming to Stillwater

Bent River camembert is just one of the beauties that will be available in downtown Stillwater

We first spotted Chris Kohtz at the Minnesota Cheese Festival, scoping out his favorite cheeses and plotting how he'd stock his case. We were pleased to learn his new gourmet cheese shop, the Wedge and Wheel, is on the verge of opening in Stillwater.

Kohtz has gone from writing about cheese for his blog Wedge in the Round to readying a full-on fromagerie in downtown Stillwater. When we asked him why, he said simply, "I love cheese." Fair enough.

There's a new cheese shop a'comin
The shop will be located at 308 East Chestnut Street in downtown Stillwater. Inside you will find a well curated selection of cheeses with a local focus. There will be fine imports from around the globe, but it's the Minnesota selection we've got our eye on. It will be a hands on (and taste bud friendly) experience, with customers encouraged to try before they buy.

For those who like to linger, or would like to spend more time discovering new varieties, the Wedge and the Wheel will also offer in-store seating for cheese flights. If all goes smoothly, those flights will include beer and wine offerings. 

Things are humming along and Kohtz hopes to be open this November -- just in time for all your holiday hostess and gifting needs.
