The French fries are double fried for extra crispy exteriors, though the potato inside stays plush. Where poutine so often goes wrong is in the gravy -- it soaks the fries until they're soggy and robs the whole dish of this wonderful texture.
The fries here are heavily salted and peppered before being studded with fresh Wisconsin cheese curd crumbles, which melt ever-so-slightly atop them. On the side is a tidy little basin of flavor-packed pot roast gravy. Dredging those cheese-spangled potato wedges through that salty, beef jus results in a salty, crispy, juicy, gooey, heavenly, hefty bite.
