Working in downtown St. Paul just got a little bit sweeter.
Bars Bakery co-owners Kara Younkin Viswanathan and her mother Sandi Younkin, who was the original founder and previous owner of Swede Hollow Cafe
, have announced that they are expanding their operation. The pair have their sights set on a skyway space in the Alliance Bank Building in downtown St. Paul and have already signed a lease, but they still need a little seed money to make their mark and add some finishing touches before they open.
To that end, they've launched a Kickstarter campaign
and it seems to be getting a lot of response from Bars Bakery fans. After less than one active week, Bars has already raised nearly 75% of its $5,000 goal.
The new location will serve their usual bars, pastries, and coffee, but they're expanding the menu to cater to the downtown St. Paul lunch crowd. Lunch options including scratch soups, salads, and sandwiches will be available for the five days a week that Bars 2.0 plans to be open.
If you're considering contributing to the Kickstarter campaign, one of the prizes promised for pledges of $400 or more is a free brewed or pour over coffee for every day of 2014. If the Alliance Bank Building is conveniently on your way to work, and you tend to buy coffee every day, this perk could more than pay for itself.
