Food trucks bring out a predatory love of the chase for us. You can't always count on where your favorites will be parked, or what their menu will entail, but, oh the rewards are so sweet when you find yourself loping up the sidewalks, head low, eyes squinting as you spot your prey on the horizon. It's a bright orange truck and the chalkboard promises, "The Freschetta."

Fork in the Road truck serves homey dishes made from scratch, and they might be best known for their grilled cheese: fat slices of Texas toast stuffed with sweet, caramelized onions and extra gooey American cheese. For us, though, the singular dish is their take on a traditional sub sandwich.
A hoagie bun, ever-so-crusty on the outside, satisfyingly squishy on the inside, is slathered with a garlic and basil-spiked mayonnaise. It's then layered with salami, pastrami, and prosciutto and rounds of provolone cheese upon a bed of zesty giardiniera. This Italian spicy mix of pickled vegetables adds a little bit of crunch and herbal zip. The whole shebang is wrapped around ribbons of fresh Romaine lettuce and slivers of snappy, raw onion. It's a full meal for only $7.
Sometimes, it's the best simple things that turn a summer afternoon into a day of bliss.
