Don your baubles and head for bubbles inside Cosmos
How does a restaurant that's been open for over 10 years remain relevant? How does a hotel bar continue to dazzle the locals and remain a destination for travelers? If you're Cosmos inside the Graves 601 Hotel, you add an elegant champagne bar complete with a new menu and plenty of bubbly selections. Meet Relevé.

Bubbles for days inside Relevé
The menu offers an extensive list of bubbly wine by the glass, although they have full bottles as well. It might just be the longest list available by the glass in the area (definitely the longest we've encountered). Prices range from $8 for a can (yes, you read that right) of pink, sparkling Sofia to $22 for a glass of Veuve Clicquot Ponsardin. For those with money bags lying around, the top priced bottle would be Louis Roederer Cristal for $600.

The Relevé lounge is located inside Cosmos; it's not a separate space. At the Cosmos bar, guests can also mix their own bubbly concoctions with liqueurs like St. Germain and Aperol and bitters from Bittercube, Fee Brothers, or the downstairs bar Bradstreet's own blend. Staff can either make recommendations or help you mix your own. (The Sofia with a little St. Germain and Bolivar bitters was a stunner).

The menu is split into two categories, Madison Avenue and Hennepin Avenue. Madison is stacked with the elegant dishes those would expect to find with fine bubbles. Hamachi for $14 is served with cucumber and grapefruit pearls, and a fat frosted chicken pate garnished with macerated prunes is available for $13. An opulent seafood tower for $125 comes with a bevy of ocean-plucked delights including oysters on the half shell served with extracts in concentrated flavors such as pickled ramps, dill, and aquavit, or bacon and Belvedere vodka. Deviled eggs are garnished with slices of lobster. Shrimp cocktail is served with a zippy horseradish sauce. 

The Hennepin Avenue menu is more on par with an upscale casual evening at the bar. There's a baked crab dip for $13, flatbread topped with chorizo and Colby cheese for $11, and even the fanciest menu selection, the lobster grilled cheese for $16, is made with white bread and cheddar cheese and served with a side of house-made chips.

Speaking of the chips, they aren't on the menu, but you might want to order a whole bowl of them if you can. Thunderously crunchy and dusted with Old Bay seasoning, they are a perfect foil for any bubbly glass. (Pro tip: Use the chips to scoop the pate and you've discovered the most decadent gluten-free bite of heaven around).
